Recipe: Banana Cake

This recipe is adapted from one I found on How to Cake It. Banana Cake: 1 cup (250g) butter 2 cups (400g) sugar 4 eggs 4 ripe bananas 1 tsp vanilla extract or 1 tbsp vanilla sugar 1/2 tsp baking powder 1/2 tsp baking soda 1/4 tsp salt 2 1/2 cups (310g) flour 3/4 cup (170mL) buttermilk  Cream butter.  It's always more fun to bake with help...  Add sugar to the butter and beat until light and fluffy.  Add eggs and beat until light in color. Break bananas into pieces and beat into the batter. Try to make sure the largest pieces are broken up.  Add dry ingredients alternately with buttermilk.  Bake at 325°F or 160°C for 35-45 minutes or until toothpick inserted into the center comes out clean.  This cake is super moist and still light and fluffy. Minnie Mouse Cupcakes

These cupcakes were for my daughter's Kindergarten birthday celebration.  I used my bow cutter to make a bunch of bows for the cupcakes. I took off the tails because I didn't need them.  I put them together into bows. There were 20 total.  I baked a couple dozen of vegan chocolate cupcakes. This is my favorite chocolate cake recipe.  The buttercream I made was brown sugar Swiss meringue buttercream, so it wasn't white. But it paired really well with the chocolate cake.  I piped it into a cupcake swirl with an open star tip.  Then I sprinkled on some white and pink non-pareils.  And added a bow on top.  I think these cupcakes turned out adorable and they tasted delicious.  Happy Birthday, Natalie! Tutorial: How to Make a Fondant Bow

This tutorial is fast, easy and adorable. I'm going to show three ways to make a fondant bow. With a fondant press mold, with a bow cutter and without any equipment.  First, press some fondant into the press mold and scrape off any excess.  Carefully turn them out of the mold and you've got your first bows!  Now, some of you may have a bow cutter like this one. They look a bit confusing to use. I'll show you how.  First, press the shapes out of fondant and remove the excess. Take the puffy-looking piece and fold the ends toward the center.  Then take the small rectangle and wrap it around the middle of the bow.  The other pieces are the tails. Just set the bow on top of the tails.  These are fast and easy and quite cute.  Finally, if you don't have either of those things, or if you just want to make your own bows a different size, they're not too hard without the equipment. Roll out a strip of fondant and cut it to be relatively even.

Minnie Mouse Clubhouse Birthday Cake

This cake is for my own daughter's third birthday. She absolutely loves Minnie Mouse. So, I promised her another Minnie Mouse themed birthday party. I let her look at probably a hundred photos of Minnie Mouse cakes and she just kept coming back to one that she seemed to like more than the others. So, getting inspiration from them, I decided to make a Minnie Mouse Clubhouse cake. I know at least one person is going to point this out, so I'll just say right now, I know it's actually Mickey Mouse Clubhouse. I'm going to use a few different colors to recreate Mickey Mouse Clubhouse into Minnie Mouse Clubhouse. I started with cake. This is peanut butter cake and brown sugar Swiss meringue buttercream. I wanted to make two tiers, but not a huge cake, so this is 6 and 4 inch cake.  I stacked and crumb-coated the bottom tier.  And the top tier on top of a four-inch cake board.  Then I frosted the bottom tier again.  And the top tier.  I made some pink fondant
