Bread Baking: Baguettes

 This is a simple version of the classic French bread recipe. Baguettes: 4 cups (500g) flour 1 1/2 cups (375mL) warm water 2 tsp salt 1 tbsp dry yeast 1 tbsp honey Combine flour and salt. In a separate bowl, activate yeast by combining yeast, warm water and honey.  Stir yeast mixture with flour mixture until you can't anymore. Knead dough together until soft but not sticky.  Allow to rise 3 times, kneading once an hour.  Form into baguette shapes. Cover and allow to rise half an hour.  Score with a knife.   Bake in preheated oven at 450°F or 230°C for 20 minutes with a dish of water in the oven. Remove the water halfway through. These baguettes are light and fluffy inside. And crispy crusty on the outside. Bon appetit! Ice Cream Series: Chocolate Chip Cookie Dough

 This is a continuation of our ice cream series and this one is a favorite of lots of people: chocolate chip cookie dough.  Chocolate Chip Cookie Dough Ice Cream: 4 cups or 1 L of vanilla ice cream 1/2 recipe edible cookie dough rolled into balls and frozen  First of all, prepare the edible cookie dough balls. You will need very small balls.  You want them to be small enough to fit on your spoon, so just a tiny pinch and roll it in a ball. I placed them in a lunch box. This is a step the kids can help with. Place these in the freezer overnight.  Then, to make it into ice cream, allow the ice cream to sit out for an hour or place in the microwave for one minute. Stir until smooth.  Fold in the cookie dough balls.  They can stick together a bit.  Pour the mixture back into the ice cream container. Freeze for two hours.  Stir once through to make sure the cookie dough balls don’t all fall to the bottom. Freeze for at least 4 hours.   This ice cream is really delicious. It's f

Recipe: Edible Cookie Dough

 I have always found the term "edible cookie dough" very ironic. Because cookie dough had better be edible, or the cookies won't be edible. Of course, what is meant by that is that the cookie dough is meant to be eaten in dough form. So, here's my recipe for "edible" cookie dough. "Edible" Chocolate Chip Cookie Dough: 1/2 cup (125g) butter 1/2 cup (100g) brown sugar 1/3 cup (70g) sugar 3-4 tbsp cream 1 1/2 tsp vanilla extract or 1 1/2 tbsp vanilla sugar 1 1/2 cups (180g) flour 1/4 tsp salt 1 cup (150g) chocolate chips Cream butter.  Cream sugars and vanilla and salt with the butter.  Add 3 tbsp cream.  Beat in flour. If the mixture is too dry to make a dough, add another tablespoon of cream until it comes together in the right texture. Fold in chocolate chips. Spidey Birthday Cake

 This was a request from a friend for her 5-year-old son. He loves Spidey and His Amazing Friends. That's like Spiderman for preschoolers. I made 8-inch vanilla cake with red food coloring. There were three layers and I filled it with dark chocolate ganache. I frosted the cake with the ganache as well. I covered the cake with light blue fondant. I cut out a bunch of gray fondant strips and placed them on the side of the cake at different heights to make a skyline. Then, using a dresden tool, I made marks in the gray strips to look like the windows of the sky scrapers. Then I rolled out some red fondant and traced Spidey's face onto it. I cut out the number 5 and the name Tim. I placed the Spidey head and the name on the cake and decided it didn't have enough room for the 5. Then I rolled out some white fondant and cut out the name again and stacked it on top of the first name. And I cut out the eyes and placed them on the head. Then I used black food coloring to paint on th
