Recipe: Homemade Eggnog

 Eggnog is one of those things that reminds me of the holidays, but isn't really a thing there. So, time to learn how to make it myself. Homemade Eggnog: 6 egg yolks 1/2 cup (100g) sugar 1 cup (225mL) heavy whipping cream 2 cups (450mL) milk 1/2 tsp nutmeg pinch salt 1/4 tsp vanilla extract ground cinnamon (optional) alcohol to taste (optional) Whisk egg yolks and sugar together. Set aside.  Combine cream, milk, nutmeg and salt. Heat in a saucepan to a simmer.  Add a tablespoon into the egg mixture to temper it. Add the egg mixture to the saucepan a tablespoon at a time and whisk together until everything is combined.  Allow to simmer until thickened. Remove from heat. Add vanilla and alcohol. Sprinkle with cinnamon before drinking. Merry Christmas! New Years Eve Fireworks Cake

 This is a simple sprinkles cake made to look like fireworks. I frosted a 6-inch cake dummy with vegan American buttercream. I covered the cake with black fondant. I smoothed it on and trimmed off the excess with a knife. I painted on some edible glue around the edge. And got some blue and white sprinkles ready. But decided to do the year first. Then I pressed the sprinkles onto the edge to stick on the edible glue. I also added a row of silver balls along the bottom of the cake and painted some edible glue around the middle of the side. I pressed some green and white sprinkles on the side and stars of pink and white sanding sugar along the top. I think this cake turned out lovely. It is really reminiscent of fireworks in the night sky. Happy New Year! May 2023 be better than 2022. Bread Baking: Chocolate Chip Quick Bread

 This quick bread was a request from my 5-year-old.  Chocolate Chip Quick Bread: 1/2 cup (125g) butter 1/2 cup (100g) brown sugar 1/4 cup (50g) sugar 2 eggs 1 tsp vanilla extract or 1 tbsp vanilla sugar 1/2 cup (140g) greek yogurt 1/2 cup (110mL) milk 2 cups (250g) flour 1 tsp baking powder 1 tsp baking soda 1/2 tsp salt 1 1/2 cup (250g) chocolate chips Cream butter and sugars together.  Add eggs, baking powder, baking soda, salt and vanilla.  Alternate 1/3 flour with yogurt and milk. Once all is combined into a sticky batter, stir in chocolate chips.  You can keep some aside to sprinkle on top. Pour into lined loaf pan.  Bake at 350°F or 180°C for 50-60 minutes or until toothpick inserted into the center comes out clean. This quick bread can tend to brown too much, so feel free to cover the top with aluminum foil while baking. But it tastes amazing and absolutely crumbles. Christmas Lights Cake

 This was a wacky, non-traditional idea for a Christmas cake. I frosted a 6-inch cake dummy with vegan American buttercream. I covered the cake with black fondant. Smoothed it on and trimmed it to size. I chopped a snake of yellow fondant into tiny bits. And rolled them into tiny balls. I also did this with orange, red and blue. I place these colors along the bottom of the cake. Then I used a fondant press form to make the phrase Merry Christmas out of white fondant. Then placed it on the cake. Finally, I added a row of white balls along the edge of the cake. So, the look I was going for was Christmas lights out of the night. Not sure that idea came across, but I guess it still works as a Christmas design. Merry Christmas.
