Bread Baking: Maple Oat Bread

I've missed making fresh bread and decided it was time to try a new recipe. Maple Oat Bread: 5 cups (625g) flour 1 1/2 cups (135g) oats 1/3 cup (75mL) maple syrup 1/4 cup (55mL) melted butter or olive oil 2 tsp salt 1 tbsp yeast 2 1/4 cup (500mL) warm water Stir together warm water, syrup and yeast. Stir in melted butter, oats and salt. Slowly add flour. Knead in remaining flour. Allow to rise for an hour. Dough will be sticky. Split into two amounts and shape into loaves. Place in oiled loaf pans. Allow to rise another half an hour. Bake at 450°F or 230°C for 45-60 minutes.  This bread is light and slightly whole grain. With a subtle maple top note. Bread Baking: Potato Bread

 Potato bread is really soft and has a nice texture. Potato Bread: 1 cup (225g) plain, mashed potatoes 1 cup (225mL) warm milk 1/4 cup (50g) sugar 1 tbsp dry yeast 4 cups (500g) flour 2 tsp salt 1/3 cup (75g) butter Combine warm milk, sugar and dry yeast.  In a large mixing bowl, stir together some of the flour, mashed potatoes, yeast mixture and salt. Cut in butter.  Knead flour slowly in until dough is no longer sticky. You may not need all of the flour.  Allow to rise about an hour. Punch down dough and shape into two loaves. Place into oiled bread pans. Allow to rise another 20-30 minutes.  Bake at 350°F or 180°C for about 30 minutes. Brush tops with butter.  This potato bread is soft and has a lovely texture. You can't really taste the potatoes. It affects the texture more than the flavor. Bread Baking: Sweet Funfetti Bread

 This is a variation of a quick sweet bread with sprinkles, because sprinkles and color make everything better. Sweet Sprinkles Bread: 3 cups (375g) flour 1 cup (200g) sugar 1 3/4 cup (395mL) milk 1/4 cup (55mL) oil 1 egg 1 tbsp baking powder 1/2 tsp salt 4 tbsp colorful sprinkles Put all the ingredients, minus the sprinkles, in a large mixing bowl and stir to combine.  Gently fold in sprinkles.  Pour batter into greased bread form.  Bake at 350°F or 180°C for 45-55 minutes or until a toothpick inserted into the center comes out clean. This cake-like bread is really delicious. And who doesn't love the extra color? Bread Baking: German Rye Bread

This was a request by a viewer, as Germany has some of the best bread in the world, in my opinion. So, this is a German recipe for rye bread. German Rye Bread: 3 2/3 cups (460g) all-purpose flour (German 550) 1 cup (125g) rye flour (German Roggenmehl) 1 2/3 cup (380mL) warm water 2 tsp salt 1 tbsp dry yeast Combine water and yeast as well as a tablespoon of all-purpose flour.  In a large mixing bowl, combine rye flour and salt. Stir in yeast mixture.  Slowly add all-purpose flour until mixture reaches bread dough consistency (soft, but not sticky).  Allow to rise for four hours. (The longer rising time is necessary to grow the yeast enough to combat the heavier rye flour.)  Knead briefly and form into a loaf. Place in a loaf pan, or onto the pan you intend to use if you want to allow it to bake free-form.  Allow to rise another hour.  Bake at 445°F or 230°C for about 45 minutes.
