Recipe: Swiss Cheese Cake (no-bake cheesecake)

Image
This was a specific request from one of my viewers for his birthday, so happy birthday, Byron! But this cake is an optical illusion. It is a no-bake cheesecake that looks like a wheel of Swiss cheese. Swiss Cheese Cake: 1 1/2 tbsp unflavored gelatin 1 1/4 cups (300g) full fat cream cheese 1 1/2 cups (300g) plain yoghurt 1/2 cup (100g) sugar 1 1/3 cups (300mL) heavy cream 1 tbsp lemon juice yellow food coloring (optional) 5 tbsp water Dissolve gelatin in water. Heat in microwave until dissolved. Set aside to bloom at least 5 minutes.  With a mixer, combine cream cheese and yoghurt.  Slowly beat in sugar.  Add lemon juice and heavy cream. Beat until combined and fluffy.  Add food coloring and gelatin and beat well.  Pour batter into 6-7 inch springform pan, smoothing it out on top.  Wrap in plastic wrap and allow to set overnight.  When cheesecake has set up, take out of refrigerator and remove springform.  Soak a melon baller in hot water and...

Recipe: New York Cheesecake

This is a recipe that someone had requested on my recipe for no-bake cheesecake.  New York Cheesecake: 1 6-inch graham cracker crust 16oz (450g) full fat cream cheese 1 cup (200g) sugar 1 1/2 tbsp flour 2 tsp vanilla extract 1 tsp lemon juice dash salt 3 eggs 1/4 cup (65mL) sour cream If you're using a springform pan, which does work best for this recipe, wrap the outside of the pan in tin foil. The reason is to keep it waterproof when it sits in the water bath. So, make sure the tin foil covers all the tiny gaps.  Make graham cracker crust and press into the bottom of the greased springform pan.  In a large mixing bowl, beat cream cheese, sugar, flour, vanilla, lemon juice and salt together until smooth.  Beat in each egg one at a time and then the sour cream.  Pour batter into the prepared springform pan.  Place the pan into a roasting pan full of 1-inch of hot water.  Bake in a preheated oven at 325°F or 160°C for about 1 hour 15 minutes to 1 hour 3...

Recipe: No-Bake Cheesecake

This is a great treat for summer as it's nice and cool. It's one of my daughter's favorite desserts. No-Bake Cheesecake: 1 package (200g) of graham crackers or butter cookies 1/2 cup (125g) melted butter 2 8-oz packages (400g) cream cheese 1/2 cup (100g) sour cream or quark 2 cups (250g) powdered sugar 1 tsp vanilla extract or 1 tbsp vanilla sugar 3 cups (600mL) whipping cream Make the crust first. Crumble the graham crackers or butter cookies into fine crumbs.  Stir in melted butter. Press the crumbs in the bottom of the baking form. I am using two small pie plates today.  Then, combine cream cheese, quark or sour cream, powdered sugar and vanilla in a large mixing bowl.  In a separate bowl, whip whipping cream to soft peaks. If you are having trouble whipping the cream, add a bit of corn starch.  Gently fold the whipped cream into the cream cheese mixture.  Pour it into the prepared crust(s). Chill in the fridge about 4 hours.  This cheesecake is lo...
