Bread Baking: Sweet Funfetti Bread

Image
This is a variation of a quick sweet bread with sprinkles, because sprinkles and color make everything better. Sweet Sprinkles Bread: 3 cups (375g) flour 1 cup (200g) sugar 1 3/4 cup (395mL) milk 1/4 cup (55mL) oil 1 egg 1 tbsp baking powder 1/2 tsp salt 4 tbsp colorful sprinkles Put all the ingredients, minus the sprinkles, in a large mixing bowl and stir to combine.  Gently fold in sprinkles.  Pour batter into greased bread form.  Bake at 350°F or 180°C for 45-55 minutes or until a toothpick inserted into the center comes out clean. This cake-like bread is really delicious. And who doesn't love the extra color? Recipe: Funfetti Cake from Scratch

Image
Funfetti cake from scratch was a nemesis of mine for quite a while. I made several failed attempts when I first attempted it. But I've been working on this recipe for a while and have now hit upon a fantastic version that I am in love with! Funfetti Cake: 1/3 cup (80g) butter 2/3 cup (150mL) oil 1 3/4 cup (350g) sugar 1 tbsp vanilla extract 1/2 tsp salt 1 tsp baking soda 3 cups (375g) flour 1 cup (225mL) buttermilk 2 tbsp lemon juice 6 egg whites 1/4 cup high quality sprinkles like Wilton nonpareils Cream butter until light and fluffy. Add oil and sugar and cream together. Stir in vanilla extract, lemon juice, salt and baking soda. In a separate mixing bowl, put in egg whites and beat to stiff peaks. Next, stir one cup of flour at a time into the butter sugar mixture alternately with half a cup of the buttermilk. Once completely combined, fold in egg whites until there are no more streaks. Lastly, sprinkle the sprinkles over the batter as well-di...

Kindergarten Farewell Cake With Rainbow Alphabet and Sprinkles

Image
This cake was for a farewell party for my daughter's Kindergarten. We've started a tradition of making a cake for the group. But this year is special. My oldest daughter is leaving this year and my youngest is coming into the group. So, for Sabrina, it really is a farewell. Now, what child doesn't love funfetti cake? So, I experimented a bit with my funfetti cake recipe. And this time it tasted amazing. So much better even than usual. This is a 9-inch round funfetti cake cut into two layers.  I filled the cake with a generous amount of vanilla American buttercream.  Then, just for good measure, I sprinkled some sprinkles between the layers.  Then I placed the second layer of cake on top.  And I crumb coated the cake with American buttercream.  Then I frosted the cake again, cleaning up the cake board when finished.  Then I used this twisted star piping tip.  And put it in a piping bag with vanilla American buttercream.  A...
