Recipe: Maple Cake

 Quick confession: I love maple. Almost as much as I love cinnamon. I thought it was high time I had a maple cake recipe up.  Maple Cake: 1/3 cup (80g) butter 2/3 cup (150mL) oil 2 cups (400g) brown sugar 1 tbsp baking powder 1 tbsp maple flavoring 1/2 tsp salt 3 cups (375g) flour 1 cup (225mL) milk 6 egg whites Beat egg whites to stiff peaks and set aside.  In a separate bowl, cream butter, oil and brown sugar together.  Beat in baking powder, maple flavoring and salt. Beat in half the flour, then half the milk. Then the rest of the flour and the rest of the milk.  Fold in egg whites.  Pour batter into greased and lined cake pans. Bake at 300°F or 150°C for 45-60 minutes, or until a toothpick inserted into the center comes out clean. This cake is light and fluffy and tastes amazingly of maple. Recipe: Devil's Food Cake

 Devil's Food Cake was invented as the opposite of the light and airy Angel Food Cake. Devil's Food Cake is a dense and decadent chocolate cake. Devil's Food Cake: 2 cup (250g) flour 2 tsp baking soda 1/2 tsp salt 1/2 tsp baking powder 1/2 cup (125g) butter 1 cup (100g) baking cocoa 1/2 cup (110mL) oil 1 1/2 cups (300g) sugar 1/2 cup (100g) brown sugar 3 eggs 1 tbsp vanilla extract or 3 tbsp vanilla sugar 1/2 cup (120g) sour cream or plain yoghurt 1 1/2 cups (330mL) milk Cream butter. Beat in sugars, oil and vanilla. Beat in eggs one at a time.  Beat in cocoa, baking soda, salt, baking powder and sour cream. Recipe: Yellow Cake

 I've been asked what is the difference between yellow and white cake. Well, white cake makes sure all ingredients with color are white: shortening instead of butter, egg whites only instead of whole eggs. So, if you couldn't care less about the color and just want the flavor, yellow cake is the way to go. Yellow (Vanilla) Cake: 2 1/2 cups (310g) flour 2 tsp baking powder 1/2 tsp salt 2/3 cup (200g) butter 1 3/4 cups (350g) sugar 1 1/2 tsp vanilla extract or 1 1/2 tbsp vanilla sugar 2 eggs 1 1/4 cup (260mL) milk Cream butter.  Add sugar and vanilla. Beat in eggs.  Add dry ingredients alternately with milk until all ingredients are incorporated.  Pour into greased baking form.  Bake at 375°F or 190°C for 30 to 35 minutes until a toothpick inserted into the center comes out clean. Recipe: Another White Cake Recipe

 I thought it would be nice to have an alternative recipe for white cake. This one is from Betty Crocker. White Cake: 2 cups (250g) flour 1 tbsp baking powder 1/2 tsp salt 3/4 cup (180g) butter 1 1/2 cups (300g) sugar 1 1/2 tsp vanilla extract or 1 1/2 tbsp vanilla sugar 1 cup (225mL) milk 5 egg whites Separate the eggs. Beat egg whites to stiff peaks and set aside. Cream butter. Beat in sugar, baking powder and salt. Add vanilla. Alternate adding 1/3 of the flour. And half the milk. 1/3 flour. 1/2 milk. 1/3 flour. Scrape the sides. Fold in egg whites. Bake at 325°F or 170°C for 30-40 minutes or until toothpick inserted into the center comes out clean. This cake gets a brown outside, but the inside is gorgeous and white. It's light and fluffy and lovely.
