Recipe: Orange American Buttercream

 This citrusy orange American buttercream is great to add a bit of extra flavor to your baked goods. Orange American Buttercream: 1/2 cup (125g) butter 4 cups (500g) powdered sugar 1/2 tbsp orange zest 2-3 tbsp orange juice orange food coloring (optional) Cream butter.  Cream in orange zest. Slowly add powdered sugar alternately with orange juice keeping it at a buttercream consistency.   Add food coloring to make it orange, since it is not orange colored naturally. Recipe: Oreo American Buttercream

 This is a frosting for a cookies and cream kind of a cake. Oreo American Buttercream: 1 cup (250g) butter 6-8 cups (750 - 1000g) powdered sugar about 1/4 cup (75mL) milk 1 tsp vanilla extract or 1 tbsp vanilla sugar about 14 (150g) Oreo cookies Cream butter.  Beat in powdered sugar a couple cups at a time, adding a tablespoon of milk to maintain consistency. Add vanilla.  Put cookies into a plastic bag and beat it with a rolling pin or make into fine crumbs in a food processor. Stir into buttercream. Recipe: Cinnamon American Buttercream

 I've already made a recipe of cinnamon Swiss meringue buttercream. I decided I needed one of American buttercream. Cinnamon American Buttercream: 1/2 cup (125g) butter 4 cups (500g) powdered sugar 2-3 tbsp milk or milk substitute 2 tbsp cinnamon Cream butter until light and fluffy.  Slowly beat in the powdered sugar, adding milk a tablespoon at a time if the buttercream is too thick.  Add the cinnamon last.  This cinnamon buttercream is full of cinnamon. It has quite an intense flavor. If you prefer something milder, considering halving the amount of cinnamon. But I loved it. It was just the right amount for me. Recipe: Strawberry Buttercream

American buttercream is really easy to alter. All you have to do is make a few small changes. That's what we did to make it strawberry buttercream. It's really easy. Here's how I do it. Strawberry Buttercream 1 cup (250g) butter 1000g (around 8 cups) powdered sugar 1/2-1 cup (125-250g) strawberry jam  Cream butter until creamy.  Add 1/4 of the powdered sugar.  Add a couple tablespoons of strawberry jam until the mixture becomes more of a buttercream consistency.  Add another 1/4 of the powdered sugar and another few tablespoons of strawberry jam.  Add the next 1/4 of powdered sugar.  Add more strawberry jam as needed.  Add the last of the powdered sugar.  Add strawberry jam as needed to get the consistency you want. The amount of jam you use may vary quite a bit. You may need more or less depending on the consistency of your butter and the consistency of the buttercream that you want.  But look how lovely that...

Recipe: Vegan American Buttercream

Being very conscious of intolerances and special diets, I decided it was time to show everyone how I make my vegan American buttercream. Vegan American Buttercream: 1 cup (250g) vegetable shortening (you can also use vegan margarine) 8 cups (1000g) powdered sugar ca. 1/4 cup water or liquid of choice 2 tsp flavoring of choice (vanilla extract, almond extract, lemon extract, etc.)  First, cream the shortening.  Then add the first box (2 cups or 250g) of powdered sugar.  Thin it down with water to get it to the right consistency. Now would also be the best time to add your flavoring.  Now the next box of powdered sugar. Keep adding the powdered sugar one box at a time and add the water a tablespoon or two at a time to thin it down whenever it gets too thick. Add more powdered sugar if it gets too thin.  In the end, it should look like this. White and gorgeous. This recipe works really well for wedding cakes because it is so white. And it...

Fourth of July American Flag Cake

My profile picture for American Baker in Germany is a slice of an American flag cake that I made several years ago. I love this photo and I chose it to represent American Baker in Germany because what says American Baker more than a piece of American flag cake?  But let's be honest. It was a snapshot taken with a mobile phone on a paper plate. There are better quality photos. Plus, I had never made a video making this cake before. It was time to remake the cake. I started out by baking some vanilla cake. I needed three layers of red cake, one thick layer of blue and two layers of white cake.  Then I took a circle cutter about half the size of the layers and cut out the centers of the blue cake, and one layer of red and white.  Then I started out by stacking it with one layer of red cake, one layer of white cake.  Then another layer of red and the ring of blue cake.  Inside the blue cake, I place the small circle of white cake.  Then fr...
