Baking Basics: How to Make Stabilized Whipped Cream

So, I went over basically a list of what not to do when whipping your cream and showed what it looked like when it gets overwhipped and becomes butter. Today we're going to go over how to make stabilized whipped cream so it looks beautiful and tastes amazing. In Germany, there's a product with several names including Sahne Steif, Sahnapart, and Sahnefest. Most people buy it and add it to their whipping cream to stabilize it. However, there's maybe half a tablespoon of a mix of powdered sugar and corn starch in the packets. Yeah, we could do that ourselves. Stabilized whipped cream: 1 liter of whipping cream 2 cups (250g) powdered sugar 2 tsp vanilla extract or 2 tbsp vanilla sugar Okay, so you might not want to go for a full on liter. Although, why wouldn't you? But, assuming you are like the average person and you only need a little bit of whipped cream to top a dessert, let's tone down the recipe a bit. Blueberry Cake Frosted with Whipped Cream

This cake was fairly spontaneous. I had a lot of blueberries and a lot of whipped cream. So, I mixed up a batch of blueberry cake and made some stabilized whipped cream to put on it. So, this is not difficult to decorate. But it's the kind of cake that makes your mouth water. So, I started off with a seven-inch blueberry cake. If I haven't posted the recipe yet, it will come out shortly. I filled the cake with a thin layer of stabilized whipped cream. I added the next layer and frosted the cake with whipped cream. I carefully smoothed the whipped cream and cleaned up the cake board. I added a row of blueberries along the bottom of the cake. And a row of blueberries along the top. Finally, I added a group of three berries in the middle. I love cakes like this. You can see from the outside what's on the inside. And what tastes better than blueberries and whipped cream? Yum! Watermelon that Looks Like a Cake

This year, my husband didn't want a cake for his birthday. So, I thought about it, and decided to surprise him by making a cake out of watermelon! This kind of "cake" is perfect for those on a diet, diabetic, or who don't care for sweet things. First, I bought the watermelon as well as an assortment of beautiful berries. I bought cherries, raspberries and blackberries to decorate with. But you can literally decorate with whatever you would like to.  Then I whipped up some whipped cream.  Now, it's time to cut the watermelon.  First, cut the ends off your watermelon.  Then I put the whipped cream in a piping bag with a star tip.  And I continued to cut off the watermelon rind.  Then, I cleaned up the watermelon by leveling it and smoothing out the edges.  And piped a shell border of whipped cream.  And piped dabs on the top of the cake.  Then I placed some cherries around the bottom of the cake.  And placed...

Black Forest Cherry Cake

To celebrate the Tag der deutschen Einheit (German reunification day, basically German independence day, celebrated October 3rd), we are making a traditional German recipe. This recipe comes from the Black Forest in southern Germany. To make a Black Forest Cherry Cake, you need two (or more) thin layers of chocolate cake. I used my vegan chocolate cake. You also need a lot of whipped cream. I whipped a liter, but used around 3/4 of it. I also used a package of cream stabilizer (Sahnesteif, consisting of corn starch) and powdered sugar to stabilize the whipped cream. I used canned cherries, drained. I'm showing a small bottle of Black Forest Cherry Water (Schwarzwälder Kirschwasser), but we didn't use it since this cake will also be eaten by my small children. If you want to use it, it is typically used by soaking the cherries in the schnapps and some people brush it on the cake layers and let it soak in.
