Bread Baking: Chocolate Chip Quick Bread
This quick bread was a request from my 5-year-old.
Chocolate Chip Quick Bread:
1/2 cup (125g) butter
1/2 cup (100g) brown sugar
1/4 cup (50g) sugar
2 eggs
1 tsp vanilla extract or 1 tbsp vanilla sugar
1/2 cup (140g) greek yogurt
1/2 cup (110mL) milk
2 cups (250g) flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 1/2 cup (250g) chocolate chips
Cream butter and sugars together.
Add eggs, baking powder, baking soda, salt and vanilla.
Alternate 1/3 flour with yogurt and milk. Once all is combined into a sticky batter, stir in chocolate chips.
You can keep some aside to sprinkle on top. Pour into lined loaf pan.
Bake at 350°F or 180°C for 50-60 minutes or until toothpick inserted into the center comes out clean.This quick bread can tend to brown too much, so feel free to cover the top with aluminum foil while baking.
But it tastes amazing and absolutely crumbles.
