Recipe: Zimtsterne (Cinnamon Stars)

 In Germany there is a great kind of star-shaped cookies called Zimtsterne or cinnamon stars. They are mostly only available during the holidays. So, I love cinnamon. Therefore, I knew I needed to learn how to make these.

Zimtsterne (cinnamon stars):
3 egg whites
2 cups (250g) powdered sugar + more to roll out dough and thicken icing
1 tsp vanilla extract or 1 tbsp vanilla sugar
a few drops of rum or almond extract, if desired
1 tbsp cinnamon (more or less to taste)
5 1/2 cups (400g) ground almonds or hazelnuts


Beat egg whites to stiff peaks. 



Slowly beat 2 cups of powdered sugar into it. 


Set aside two heaping tablespoons of the meringue mixture. 


Add the vanilla, rum or almond extract and cinnamon to the remaining meringue. 


Fold in the ground nuts half at a time with a spatula until dough comes together and separates from the side of the bowl. 



Roll out portions of the dough and cut out stars with a cookie cutter. 




Bake at 350°F or 180°C for 10-13 minutes. Do not allow to brown. Cookies should be lighter in color and no longer look wet. 


Add more powdered sugar to the meringue set aside until it reaches icing consistency. 


Put icing into a piping bag without a tip and pipe icing on cooled cookies. 


Allow to crust about 20-30 minutes.
