Recipe: Strawberry Swiss Meringue Buttercream

 This is very similar to how we made the raspberry Swiss meringue buttercream. But it is such a great alternative to standard Swiss meringue buttercream.

Strawberry Swiss Meringue Buttercream:
7 egg whites
1 1/2 cups (300g) sugar
2 cups (500g) butter
1/2 tsp salt
1 small jar (270g) seedless strawberry jam
2 tsp strawberry flavoring (optional)

In a metal or glass bowl, combined egg whites and sugar with a whisk.
The mixture will be quite thick at this point.
Heat it over a double boiler for several minutes until the sugar is no longer grainy and the mixture is hot to the touch.
Now, it will be quite thin.
Whip the mixture with a mixer until it comes to stiff peaks, is white and glossy and the bowl is no longer warm to the touch. The bowl should be room temperature.
Cut the butter into small pieces, about 1 tbsp sized pieces.
Add them to the meringue slowly, allowing each to combine before adding the next.
It can look quite runny or chunky and separated before it comes together properly.
True confessions. I had a really hard time with this recipe. I've made Swiss meringue buttercream a thousand times. But it just didn't want to come together today. But I finally got it a level I could use.
Add the salt, flavoring and jam to the buttercream and beat it through.
It might change the color slightly, but it won't be very dark yet.
I set aside some buttercream, because most of this buttercream is predestined to be colored something completely different, but one suggestion I have to make sure people know it's strawberry flavored, is to add a bit of color.
So, I added some red and pink food colorings to get that gorgeous strawberry color.
Here you can see the difference a bit better. In my experience, people won't think something tastes like strawberry unless it looks like it tastes like strawberry.
Even though these two buttercreams taste exactly the same, one looks much more appetizing than the other.
