Bread Baking: Sourdough Bread

 I have to be honest. I found this recipe difficult. The positive part of it is that it literally contains three ingredients, which makes it kind of miraculous. It's almost purely out of flour and water. On the other hand, it takes a lot of time. A. Lot. Of. Time. So, if you are extremely patient and have a lot of excess flour, but no yeast, this is the recipe for you!

Sourdough Bread:
2 tbsp sourdough starter
1/2 cup (75g) flour
1/3 cup (75mL) water
1-2 tsp salt (according to taste)
2 1/4 cups (500mL) water
about 6 cups (750g) flour

Combine sourdough starter with 1/2 cup flour and 1/3 cup water.
Combine and allow to sit for at least 3 hours to overnight.


Add beginning dough to a large mixing bowl.
Combined flour and salt together. Add water and flour/salt mixture to the large mixing bowl and combined until it becomes a soft dough. You may need a few tablespoons more or less of flour. Knead for a few minutes.  Cover and allow to rise for 2-4 hours.

Split the dough into two and form into loaves and slit on top.
Cover and allow to rise for another 1-2 hours.

Bake at 450°F or 220°C for 30 minutes and turn down the heat to 400°F or 200°C and bake for another 30 minutes.

This bread has a thick crust and is soft, lovely and not too sour on the inside.
