Recipe: Banana Pudding
This is a great, easy recipe for any time of year. Banana Pudding: 2/3 cup (125g) sugar 1/3 cup (50g) flour pinch salt 3 eggs 2 cups (450mL) milk 2 tbsp butter 1/2 tsp vanilla extract or 1/2 tbsp vanilla sugar 2 bananas 6 oz. (170g) vanilla wafer cookies Combine sugar, flour, salt in a medium saucepan. Add eggs and stir well with a whisk. Stir in milk. Heat of low heat, stirring constantly. Allow mixture to thicken enough to coat the back of a metal spoon. Remove from heat and stir in butter and vanilla. Layer in a dish layers of vanilla wafers, pudding and banana slices. The banana slices on top will brown, so if you don't want that, press them down until the pudding covers them. Refrigerate at least 1 hour before serving.
