Box of Tissues Farewell Cake

This cake was for a colleague of mine who decided to change jobs. As a farewell to him, I made this cake. All of us colleagues got together and bought him a gift card as a farewell gift and we wanted to give it to him inside the cake. So, I put my thinking cap on and tried to think of a design which would lend itself to something like this.  First, I wrapped the gift card in plastic wrap.  Then I rolled out some gum paste really thin.  And wrapped it around the gift card and over some dowels and allowed to to dry. I wanted it to look like a sheet of tissue paper.  Ironically, I had some banana cake already baked and ready to go, but it was round. But to make a box of tissues, it doesn't really lend itself well.  So, I carved the cake into a more rectangular form, with the sides more trapezoidal.  I filled the cake with a thin layer of dark chocolate ganache. Recipe: Apple Pie

Apple pie is the first baking recipe that I ever made completely by myself without any help at around age twelve. Apple pie is perfect for apple season in the fall. Therefore, I love making it around Thanksgiving time. Apple Pie: 1 double crust pastry (one whole recipe of my pie crust) 6 medium apples (may need more or less depending on the size of the apples) 1/4 cup (50g) sugar 2 tbsp flour 1-2 tbsp cinnamon (by taste) sugar for sprinkling on the crust Peel, core and slice the apples into small pieces. Sprinkle sugar, flour and cinnamon over the top and mix together. You won't need extra moisture. The apples are juicy enough. Roll out half of your pie crust dough and place it into a pie plate. Fill the pie with your apple mixture. Roll out the other half of the pie crust and place on the top of the first crust. Pinch the edges together and cut off the excess. Sprinkle the top with sugar. Thanksgiving Basket Cake

This cake came about because my colleagues were complaining that I haven't brought in a cake for a while and I wanted to make a cake for Thanksgiving. This was the result. I used some leftover funfetti cake and chocolate frosting. I filled...  ... and frosted the cake in the chocolate frosting.  I used a basketweave tip (bottom right), a small round tip and various sizes of star tips.  I put the chocolate frosting in a piping bag with a basketweave tip, yellow with the small round tip, and various combinations of red, yellow and brown with the different star tips.  I started out piping the basketweave onto the side of the cake. Basketweave is easy to pipe. Start with a vertical line.  Then cross it with short lengths horizontally.  Then pipe the next vertical line covering the ends of the horizontal lines. Then fill in the gaps between the other horizontal lines with new horizontal lines.  Continue this pattern all the way aro...
