Recipe: Homemade Marshmallows

I wanted to learn to make marshmallows at home for those annoying days when I couldn't find some at the store.  Homemade Marshmallows: 2 1/2 cups (500g) sugar 3/4 cup (200mL) water 1/2 cup (125mL) water (for the gelatin) 2 1/4 tbsp (20g) gelatin Pinch of salt 1 tsp vanilla extract or 1 tbsp vanilla sugar Powdered sugar In a saucepan, add sugar and 3/4 cup water (and vanilla sugar, if using that). Stir to dissolve. Stop stirring while heating. Heat over high heat until sugar syrup reaches hard ball stage.  While the sugar syrup is heating, add 1/2 cup water and gelatin to a bowl and stir to dissolve, allowing gelatin to bloom for about 5 minutes. When the sugar syrup has reach the correct stage, remove from heat and allow to stand briefly. In the meantime, add gelatin to a stand mixer with a whisk attachment. Slowly add sugar syrup to gelatin mixture while mixture is beating on low. Then beat mixture on medium high for about 6 minutes or until mixture triples in volume. Add sal

Buttercream Roses Birthday Cake

 This cake was for my daughter's eleventh birthday and everything was requested by her. This is a 6-inch red velvet cake without food coloring and cream cheese frosting. I frosted the cake and cleaned up the cake board. I used a fondant press form to make my daughter's name, Sabrina. Then I mixed edible gold dust with alcohol and painted the name gold. I placed it on the cake as centered as I could. Then I colored the cream cheese frosting red, dark red and green. The two reds are in piping bags with a petal tip and the green with a leaf tip. Then I piped some buttercream roses and placed them around the cake. I also switched colors and made more roses. Then I piped some leaves to cover up some messy spots and fill in the final gaps. I love how this cake turned out. Sabrina was so excited. She said it was exactly what she wanted. Happy birthday, Sabrina. Bread Baking: Olive Bread

 I love olive bread. My kids aren't the biggest fans, but I made this one just for me. Olive Bread: 4 cup (500g) flour 1 tbsp dry yeast 1 tsp salt 1 1/2 cup (375mL) warm water 1 tbsp olive oil 2 tsp honey 1 1/2 cups (250g) olives chopped and drained Combine warm water, yeast and honey to activate the yeast.  In a large bowl, combine about half the flour and salt.  Stir in olive oil and yeast mixture until smooth.  Slowly stir in more flour until you can't anymore and knead in more flour until mixture forms a soft dough.  Knead in olives. Add a bit more flour if the olives add too much moisture.  Allow to rise about an hour.  Knead briefly. Form into loaf.  Cut top of the loaf.  Bake at 400°F or 200°C for about 40 minutes or until bread is golden brown and sounds hollow when tapped. This bread is lovely and absolutely delicious.
