Bread Baking: Olive Bread

 I love olive bread. My kids aren't the biggest fans, but I made this one just for me.

Olive Bread:
4 cup (500g) flour
1 tbsp dry yeast
1 tsp salt
1 1/2 cup (375mL) warm water
1 tbsp olive oil
2 tsp honey
1 1/2 cups (250g) olives chopped and drained


Combine warm water, yeast and honey to activate the yeast. 


In a large bowl, combine about half the flour and salt. 


Stir in olive oil and yeast mixture until smooth. 


Slowly stir in more flour until you can't anymore and knead in more flour until mixture forms a soft dough. 


Knead in olives. Add a bit more flour if the olives add too much moisture. 


Allow to rise about an hour. 


Knead briefly. Form into loaf. 


Cut top of the loaf. 


Bake at 400°F or 200°C for about 40 minutes or until bread is golden brown and sounds hollow when tapped.


This bread is lovely and absolutely delicious. It's a great addition to any meditterranean meal.
