Recipe: Orange Cupcakes

 This is a delicious citrusy orange cupcake recipe. Orange Cupcakes: 2 1/2 cups (310g) flour 2 tsp baking powder 1/2 tsp salt 1 tbsp orange zest 2/3 cup (200g) butter 1 1/4 cup (250g) sugar 2 eggs 1 1/4 cup (260mL) orange juice Cream butter.  Cream in sugar and eggs. Add baking powder, salt and orange zest.  Alternately add flour and orange juice.  Add food coloring, if desired. Spoon into lined cupcake form.  Bake at 350°F or 180°C for 20 minutes.  These orange cupcakes have a subtle orange flavor, but taste delicious. Soft and moist. Enjoy! Sun-themed Birthday Cake

 This cake was a request from a friend of mine for their birthday. This is 6-inch round chocolate cake. Filled with raspberry Swiss meringue buttercream and fresh raspberries. Then I frosted the cake with raspberry Swiss meringue buttercream. While the cake was chilling, I worked on some decorations. I made a disk of rainbow colors. And cut it in half to make two rainbows. Then I frosted the cake again. I covered the cake with white fondant. I placed a yellow circle on top of the cake. And added squiggles around the side. I placed green waves on the side and placed the rainbows. I placed some purple flowers on the green waves. Then I added green leaves around the bottom and yellow flowers around the side. Finally, I added bright orange flowers and orange swirls around the sun. I love how this cake turned out. It's so happy and summery. Happy Birthday Lisa! Recipe: Strawberry Shortcake

 What could be more spring-like than strawberry shortcake? We have had some really great weather lately, so I decided the time was perfect to make one. Strawberry Shortcake: 1 3/4 cups (350g) sugar 1/2 cup (110mL) oil 2 eggs + 2 egg whites 1 tbsp vanilla extract or 3 tbsp vanilla sugar 2/3 cup (150g) sour cream or plain yoghurt 2 1/2 cups (315g) flour 1 tbsp baking powder 1/2 tsp salt 3/4 cup (180mL) milk about 3 cups (400g) strawberries 2 1/4 cups (500mL) heavy cream 1 cup (125g) powdered sugar Begin by making the cake part. Beat eggs, egg whites, oil, sugar and vanilla together until frothy.  Add sour cream or yoghurt, baking powder and salt. Add half the flour and beat until just combined. Add milk and combine. Fold in remaining flour.  Pour batter into three greased and lined shallow 8-inch cake pans.  Bake at 350°F or 180°C for about 20 minutes.
