Recipe: Strawberry Shortcake

 What could be more spring-like than strawberry shortcake? We have had some really great weather lately, so I decided the time was perfect to make one.

Strawberry Shortcake:
1 3/4 cups (350g) sugar
1/2 cup (110mL) oil
2 eggs + 2 egg whites
1 tbsp vanilla extract or 3 tbsp vanilla sugar
2/3 cup (150g) sour cream or plain yoghurt
2 1/2 cups (315g) flour
1 tbsp baking powder
1/2 tsp salt
3/4 cup (180mL) milk
about 3 cups (400g) strawberries
2 1/4 cups (500mL) heavy cream
1 cup (125g) powdered sugar


Begin by making the cake part. Beat eggs, egg whites, oil, sugar and vanilla together until frothy. 



Add sour cream or yoghurt, baking powder and salt. Add half the flour and beat until just combined. Add milk and combine. Fold in remaining flour. 


Pour batter into three greased and lined shallow 8-inch cake pans. 


Bake at 350°F or 180°C for about 20 minutes. Remove from oven and allow to cool completely. 



Next beat cold heavy cream until beginning to thicken and slowly beat in powdered sugar. Continue to beat until cream reaches soft peaks. 



Place one cake layer on a serving plate. Spoon whipped cream onto it until just short of covered. Add slices of fresh strawberries. 



Add another layer of cake and repeat the process until all cake layers are used. You can also get creative with the design of the strawberries.
