Brown Sugar in Germany vs. USA

There's no denying it. Brown sugar in Germany is vastly different from brown sugar in the US. So, first let's look at what they look like.

Brown sugar in Germany is dry and grainy and looks like this.
 
In contrast, brown sugar in the US is soft and sticky and has a similar consistency to wet sand.
The good news is that many recipes still turn out the same. The general rule is any recipe where the sugar dissolves, will taste the same with German brown sugar than with American brown sugar. For example, cake recipes or if you put brown sugar in oatmeal.

The bad news is that if you're making something where consistency is important, like cookies for example, then it's important to use American-style brown sugar.

You can sometimes find it in specialty shops. But, it's actually fairly easy to make. It only has two ingredients.

Brown Sugar:
1 cup (200g) white sugar
1 tbsp molasses

Mix the two ingredients with your fingers until they are combined.

Molasses is possible to find in Germany. It's called Melasse and can be found in organic food shops or organic food sections of larger grocery stores.

Here's what mine looked like.
It turns out quite similar to American brown sugar. The consistency is just a tiny bit grainier than store bought brown sugar, but is about 90% similar.
