Bread Baking: Ciabatta Bread

 Ciabatta is a light and airy Italian bread, but it's surprisingly simple.

Ciabatta Bread:
1 cup (225mL) water
1/2 tsp sugar
2 tsp dry yeast
2 1/4 cup (280g) flour
1 tsp salt


Combine water with sugar and yeast and let it activate the yeast for about 5 minutes. 


In a large bowl, stir flour and salt together. 


Add the water mixture and mix with a wooden spoon until completely combined. The dough will be very sticky. Don't expect it to be as dry as regular bread dough. This is a very sticky recipe. 


Sprinkle a tablespoon of flour over the dough and let it rise for an hour and a half. 


Preheat the oven to 425°F or 220°C. Line a baking sheet with parchment paper and sprinkle with a tablespoon or two of flour. Carefully tip the dough onto the baking sheet, trying to keep the floured side up. Cut in half with a pastry cutter or a large knife and form into two rectangles. 



Bake for 20-25 minutes with a pan of hot water in the oven to create steam. This will help the crust to form properly.
