Recipe: Easy Peach Cobbler

Image
This is a great recipe for winter because it uses canned peaches. It's also really easy to make. Double plus. Peach Cobbler: 1 large can (820g) peaches in syrup 1 cup (125g) flour 1 tsp baking powder 1/2 tsp salt 1/4 tsp baking soda 3/4 cup (150g) sugar 1/2 cup (125g) melted butter 1/2 tsp cinnamon (optional) In a medium mixing bowl, combine flour, baking powder, salt, baking soda, sugar, cinnamon and melted butter.  Spread about 1/3 of the mixture along the bottom of the baking pan.  Add the peaches (cut in pieces if you have halves) with the juice into the pan. You can use all the liquid, or not, as you prefer.  Spoon the rest of the flour mixture over the peaches.  Bake at 350°F or 180°C for 40-45 minutes. This is a super easy recipe and tastes great all year round! Recipe: Quiche Lorraine

Image
This is a great recipe for dinner, but it is not sweet. Quiche Lorraine: 1 large or 2 small pie crusts, blind baked 1/2 lb (220g) of bacon, browned and cut into small pieces 1/2 onion, chopped 2 cups (220g) shredded cheese 1 cup (225mL) cream 3/4 cup (180mL) milk 5 eggs 1/2 tsp salt 1/4 tsp pepper 1/4 tsp ground paprika dash nutmeg 1 tbsp chopped parsley or chives These ingredients do need a bit of preparation, as the pie crusts must be blind baked beforehand, and the bacon browned and chopped in pieces. The preparation takes the most time. Stir all ingredients together and pour into pie crusts.  Bake at 350°F or 180°C for 35-40 minutes.  This is absolutely delicious. My kids loved it, too. Bon Appetit! Recipe: Homemade Berry Pop Tarts

Image
We've made cherry pop tarts before. But let's try some berry pop tarts. Homemade Pop Tarts: 2 cups (250g) flour 2/3 cup (185g) butter 1/2 tsp salt 3 tbsp sugar about 1/4 cup (55mL) water berry jam 2 cups (250g) powdered sugar 1 egg white purple food coloring (optional) sprinkles for decoration (optional) Combine flour, salt and sugar. Cut in butter.  Sprinkle water a tablespoon at a time and knead briefly to make sure the dough comes together.  Roll out on a floured surface. Cut into squares.  Place the first squares on a lined baking sheet. Spoon jam on a square of dough. Place a second square of dough on top and pinch edges together.  Poke the top with a fork. Bake at 350°F or 180°C for about 15 minutes. Remove from oven and allow to cool completely.  Combine egg white, powdered sugar and food coloring with a whisk to make purple royal icing. Frost with royal icing and sprinkles.  Watch us make these sweet treats on our YouTube channel here: https:/...

Bread Baking: Potato Bread

Image
Potato bread is really soft and has a nice texture. Potato Bread: 1 cup (225g) plain, mashed potatoes 1 cup (225mL) warm milk 1/4 cup (50g) sugar 1 tbsp dry yeast 4 cups (500g) flour 2 tsp salt 1/3 cup (75g) butter Combine warm milk, sugar and dry yeast.  In a large mixing bowl, stir together some of the flour, mashed potatoes, yeast mixture and salt. Cut in butter.  Knead flour slowly in until dough is no longer sticky. You may not need all of the flour.  Allow to rise about an hour. Punch down dough and shape into two loaves. Place into oiled bread pans. Allow to rise another 20-30 minutes.  Bake at 350°F or 180°C for about 30 minutes. Brush tops with butter.  This potato bread is soft and has a lovely texture. You can't really taste the potatoes. It affects the texture more than the flavor.
