Bread Baking: Maple Oat Bread

I've missed making fresh bread and decided it was time to try a new recipe.

Maple Oat Bread:
5 cups (625g) flour
1 1/2 cups (135g) oats
1/3 cup (75mL) maple syrup
1/4 cup (55mL) melted butter or olive oil
2 tsp salt
1 tbsp yeast
2 1/4 cup (500mL) warm water

Stir together warm water, syrup and yeast.
Stir in melted butter, oats and salt. Slowly add flour.
Knead in remaining flour. Allow to rise for an hour.

Dough will be sticky. Split into two amounts and shape into loaves. Place in oiled loaf pans. Allow to rise another half an hour.


Bake at 450°F or 230°C for 45-60 minutes. 

This bread is light and slightly whole grain.
With a subtle maple top note.
