Strawberry Cake Recipe

After trying at least five different strawberry cake recipe and not finding a single one that tasted strongly of strawberries, I decided to try to develop my own. This is a variation of my vanilla cake recipe that I tweaked a bit to be strawberry flavored.

I do need to mention one of my ingredients. Strawberry flavoring. Without it, the cake doesn't taste like strawberries. Because actual strawberries don't have nearly as strong a flavor as most people think they do. Most recipes that I found called for dry strawberry jello packet. Um... I have a very hard time finding those in Germany. They probably exist, but they're hard to find. Red jello is raspberry flavored around here. So, if you have it, feel free to use that instead, but around here strawberry flavoring was a lot easier to find.
 Strawberry Cake Recipe:
1/3 cup (85g) of butter
2/3 cup (150mL) of oil
2 cups (400g) of sugar
1 tbsp of strawberry flavoring or 1 package of dry strawberry jello
2 3/4 cups (350g) of flour
1 tbsp of baking powder (1 package)
1/2 tsp salt (dash)
1 small (250g) jar of strawberry jam (I prefer chunkless and seedless, but feel free to use your favorite). If you need to measure it, that's about 1 cup of jam.
2-3 tbsp of milk (to thin the batter)
6 egg whites beaten to stiff peaks
1/2 tsp pink gel food coloring (optional)

Instructions:
Cream butter. Add oil and sugar and beat until combined. Add strawberry flavoring or strawberry jello and combine. Add dry ingredients and combine. The batter will be quite dry. Add jam and mix. Add milk until the batter is a nice cake batter consistency. Add food coloring, if desired. Fold in egg whites. Bake at 300°F or 150°C for 45-55 minutes for one 10 inch pan, 35-45 minutes for two 8 inch pans, 15-20 minutes for cupcakes.
 Of course, you need not add the food coloring, if you prefer. However, in my experience, people won't think that it tastes like strawberry unless it looks like it tastes like strawberry.

The jam browns quite a bit in the oven, so when you take it out, it should look something like this:
 However, after leveling, the gorgeous pink cake comes out.
This recipe is dense, moist and delicious. It tastes strongly of strawberries and will impress the strawberry lover in your family.
