Recipe: Pumpkin Spice Cake

I've been trying out recipes recently and I stumbled upon one I thought was almost perfect. Tweaked it just a tiny bit, and now it's my favorite pumpkin spice cake recipe.

Pumpkin Spice Cake:
1 cup (250g) butter
1/2 cup (110mL) oil
1 cup (200g) sugar
1/2 cup (100g) brown sugar
4 eggs
1 tbsp vanilla extract or 3 tbsp vanilla sugar
2 cups (500g) pumpkin puree
1/4 cup (60mL) milk
1 1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 tsp pumpkin spice
3 tsp cinnamon
2 1/2 cups (315g) flour


Cream butter, add oil and both sugars and beat until light and creamy. 





Add eggs one at a time. 


Stir in vanilla, pumpkin puree and milk. Batter should still be fairly light and fluffy. 


Add dry ingredients in three or four amounts, stirring until combined between each addition. 


Pour into a lined and greased baking pan. 


Bake at 325°F or 160°C for 35-50 minutes or until toothpick inserted into the middle comes out clean.

This cake is soft and moist. Very pleasant to eat!
