Recipe: Blueberry Muffins
This is my favorite recipe for blueberry muffins. Adapted from one I found online.
Blueberry Muffins:
2 cups (250g) flour
1 cup (200g) sugar
1 tsp baking powder
1 tsp baking soda
dash salt
1 egg
1 cup (225mL) buttermilk
1/2 cup (125g) melted butter
1/2 tbsp vanilla extract or 1 1/2 tbsp vanilla sugar
2 cups (200g) blueberries fresh or frozen
Add dry ingredients and combine them. Add the rest of the ingredients except blueberries and mix with a spoon until batter is smooth with a few lumps.
Gently fold in the blueberries. Frozen berries are easier to work with, although fresh bake up just as nicely.
Bake them in a lined muffin tin for 15-20 minutes at 350°F or 180°C.
They do brown some on the outside, but the inside is filled with blueberry goodness.
