Recipe: Cinnamon Swirl Cake

I love cinnamon. If there is a way to bake it into a cake, I'm all for it. This is a variation on my vanilla cake. But it makes amazing cinnamon cake.

Cinnamon Swirl Cake:
1/3 cup (85g) of butter
2/3 cup (150mL) of oil
1 cup (200g) of sugar
1 tbsp of vanilla extract or 3 tbsp vanilla sugar
2 3/4 cups (350g) of flour
1 tbsp of baking powder (1 package)
1/2 tsp salt (dash)
1 cup (225mL) milk
6 egg whites beaten to stiff peaks
1 cup (210g) of cinnamon sugar (1 cup sugar + 2 tbsp cinnamon) according to taste

Cream butter.

Add oil and sugar and beat until light and fluffy.
Add vanilla, salt and baking powder and mix until combined. Add flour and milk alternately until everything is completely combined.


Fold in egg whites.
Pour half the batter at a time into your baking form and sprinkle cinnamon sugar over the top, swirling it gently through the batter with a butter knife before adding the rest of the batter.



Sprinkle more cinnamon sugar on the top and swirl it into the batter until it is no longer dry.
As with most recipes, you can vary it to taste. Only adding cinnamon and sugar in the middle will give a mild cinnamon flavor. Adding cinnamon sugar on the top of the cake as well will make the flavor significantly more intense.

Bake at 300°F or 150°C for 35-50 minutes or until toothpick inserted into the center comes out clean.
 You can even see the swirl on the side of the cake.
 This is what it can look like when cut into. Depending on how much you mix in the cinnamon and sugar it can be must more uniform or less. I like having the visible swirls of cinnamon.
 I cut my cake into two layers, and this was the lower layer. Here the swirling was much more uniform than the top layer.
