Recipe: Brown Sugar Swiss Meringue Buttercream

This recipe came about kind of by accident. I wanted to make Swiss meringue buttercream for a project and noticed while making it that I didn't have enough white sugar for the recipe, so I decided to substitute the rest with brown sugar. It turned out so good, I decided to make a whole recipe of brown sugar Swiss meringue buttercream. So, here it is.

Brown Sugar Swiss Meringue Buttercream:
7 egg whites
2 cups (400g) (packed) brown sugar
2 cups (500g) butter
2 tsp vanilla extract or 2 tbsp vanilla sugar
pinch of salt
 First, separate your eggs. We only need the egg whites.
Then add the brown sugar to the egg whites and whisk it together. Also add the vanilla sugar at this point if you're using that. You can use German style dry, large-grained brown sugar for this recipe or American soft brown sugar. Both work, but if you're using American brown sugar, make sure you pack it into your measuring cups.
 Heat the egg and sugar mixture over a double boiler until all the sugar is dissolved and mixture is hot to the touch. It should also be rather thin in consistency and have a frothy top.
 Allow to cool for around five minutes and beat with an electric mixer until the meringue reaches soft peaks. It should normally be white and glossy, but not since we used brown sugar instead of white, it's a bit off-white instead of true white. You should also make sure at this stage that your bowl is no longer giving off heat. It should be room temperature.
 Add the butter a tablespoon at a time, beating between each addition. The mixture will likely be thin and soupy at this stage.
 As you mix, it might start to look like it's separating or getting grainy.
 Then, as you mix, it will eventually start to clump up and get the consistency of cottage cheese.
 Keep beating until mixture becomes smooth. This buttercream has a lovely depth of flavor from the brown sugar and pairs with fuller flavors well, like peanut butter cake or chocolate cake.
