Recipe: Oatmeal Raisin Cookies

This is a soft, flavorful recipe for oatmeal raisin cookies.

Oatmeal Raisin Cookies:
3/4 cup (190g) butter
1 cup (200g) brown sugar
1/2 cup (100g) sugar
2 eggs
1 tsp vanilla extract or 1 tbsp vanilla sugar
1 tsp baking powder
1/4 tsp baking soda
3/4 tsp cinnamon
1/4 tsp cloves
1 3/4 cup (220g) flour
2 cups (180g) oats
1 cup (150g) raisins (optional)

 Cream butter. Add both sugars.
 Cream them together.
 Add eggs and beat well.
 Add vanilla and all spices.
 Add flour and mix.
 Set aside mixer and fold in oats.
 Fold in raisins, if desired.
 Line a baking tray with parchment paper.
 Drop cookies onto the paper about half a tablespoon at a time.
 Bake at 350°F or 180°C for 10-12 minutes.
 These are soft with crispy edges and have a lovely spice to them.
 So delicious.
 This recipe makes about 4 dozen cookies and the cookies last about a week to ten days. After that, the cookies start to go stale.
