Bread Baking: Zucchini Bread

This is an American recipe for a sweet, quick bread. Zucchini bread contains zucchini to replace most of the butter and oil to make the recipe moist. It's loaded with spices and tastes like spice cake.

Zucchini Bread:
1 1/2 cups (190g) flour
1 cup (200g) sugar
1/2 tsp baking soda
1/4 tsp baking powder
dash salt
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp lemon zest
1 cup (150g) shredded zucchini (about 1 1/2 small zucchinis)
1 egg
1/4 cup (60mL) oil
 Add all the dry ingredients to a large mixing bowl and combine.

 Add the rest of the ingredients.
 And mix them together until combined.
 Pour the batter into a loaf baking pan. This batter also makes amazing muffins.
 Bake at 350°F or 180°C for about 40 minutes.
 Allow the bread to cool completely before cutting into it.
 This bread has a thin, crumbly crust and is soft and cake-like on the inside.
 It's not the kind of bread I would make into a sandwich, but it is the kind I can eat by the slice without anything on it.
 If making the muffin version, bake at the same temperature for about 20-25 minutes.
