Baking Basics: How to Make Pumpkin Puree from a Pumpkin

 I realized that many people don't know how to make pumpkin puree from an actual pumpkin. Most people I know buy it canned. So, I thought I would show you how to make it from a pumpkin. It's not that hard. I promise.

The first thing you need is a pumpkin. Medium sized pumpkins tend to work better than the extra large ones or the very small ones. The large ones often have too much flesh to fit into your pots. The small ones can be very difficult to remove the seeds.

First, cut the pumpkin in half.
Use a spoon to remove the seeds.
Cut the nubs out with a knife.
Cut the pumpkin into large chunks.
Place them all in a large pot.
Fill the pot with water until there's enough to cover the pumpkin pieces.
Boil on high on the stove until the pumpkin becomes soft enough to insert a fork into without difficulty.
Drain the cooked pumpkin in a sieve.
Rinse with cold water to help the pieces to cool faster.

Allow to cool until you can pick them up with your hands.
Use a knife to remove the outer edge. It should be quite easy at this point.
Then cut the rest of the pumpkin into small chunks.
Use a hand mixer, blender or food processor to puree the pumpkin into a smooth mixture.
It should look something like this.
A medium pumpkin will make 3-5 cups of pumpkin puree. Use what you need and the rest freezes well in sealed containers.

You can use this puree for my pumpkin pie or pumpkin spice cake. You don't have to have canned pumpkin.
