Bread Baking: Dinner Rolls

 Just in time for Thanksgiving, this is my favorite bread recipe to use for dinner rolls. Whenever I make these, I could seriously eat the entire batch by myself.

Dinner Rolls:
6 cups (750g) flour
2 1/4 cups (500mL) milk
1 tbsp sugar
1 tbsp dry yeast
1 1/2 tsp salt
2 tbsp butter


In a large mixing bowl, combine 2 cups of flour and yeast and set aside. 



Mix milk, sugar, salt and butter in a saucepan and heat until milk is warm and butter is almost melted. Be careful not to heat too hot. You should be able to touch it with your hand without discomfort. If it's hotter than that, let it cool until it gets back down to a comfortable temperature before going to the next step. 



When the milk is around body temperature or slightly above, add to about 2 cups of the flour mixed with the yeast. 



Mix with a spoon or a mixer until the dough is smooth and no longer has lumps. Then add the next 2 cups of flour and mix in until you have a sticky dough. 


Add the last of the flour (hold back a quarter cup or so if you think you might not need all the flour) and knead until the dough becomes soft, but not sticky. 


Return to bowl, cover and let rise for about an hour or until dough doubles in size.




Remove from bowl, knead briefly. 


Roll into small balls (whatever size you prefer, just try to keep them all about the same size as each other). Place them into a greased baking pan a little bit apart from each other. 




Allow to rise another half an hour or so. 


Then bake at 350°F or 180°C for 20-25 minutes. 


Brush the tops with butter after removing from oven. Allow to cool before eating.
