Recipe: German Apple Cake

 This is a classic German recipe for apple cake. It's not too sweet and has tons of apple pieces baked right into the cake. It's not good for stacking or carving, but it's a great kind of recipe to bring to a picnic or potluck. 

Apple Cake:
3 large apples (whichever kind you like best)
2/3 cup (150g) butter
3/4 cup (150g) sugar
1/4 tsp salt
2 eggs
1 package (37g) vanilla pudding mix (the kind you cook up, not instant)
2 cups (250g) flour
1 tbsp baking powder
1/3 cup (75mL) milk


Peel, core and slice the apples. You can use slices or chunks, as you prefer. Set aside. 




In a large mixing bowl, cream butter. 


Add salt and sugar and cream together. 



Add eggs one at a time and beat until combined. 


In a separate bowl, combined dry ingredients (flour, vanilla pudding mix and baking powder). 


Add to butter mixture in three parts, alternating with the milk in two parts. Beat until just combined. 



Fold in the apples. 



Pour into a greased and lined cake pan, about ten inches, and bake at 350°F or 180°C for about 45-50 minutes. Top with a dusting of powder sugar, if desired.
