Bread Baking: Homemade Flour Tortillas

So, this recipe is neither truly baking nor is it particularly authentic. So, don't hate me, Mexicans. But this is much more of an American recipe.

Homemade Flour Tortillas:
1/4 cup (60mL) oil
1/4 cup (60mL) milk (or milk alternative)
1/4 cup (60mL) water
1 tsp salt
2 3/4 - 3 cups (350-375g) flour

Add oil, milk, water and salt into a large bowl and combine.

Add flour slowly. Stirring it in until it becomes a ball and then knead it in until you can't get any more flour to combine.

Split them into small balls about an inch or an inch and a half in diameter.

Roll them out on a silicone mat or floured surface until very thin. Set them aside.

Heat a clean frying pan over medium heat.

Place the rolled out tortillas into the clean pan. No oil is needed.

Bake on each side only about 30 seconds. If the tortillas brown too quickly or turn black in spots, turn the heat down a bit.

These will be fairly pliable for a few hours, or a few days if kept in a plastic bag. They also freeze well. But if left out overnight, they will harden quite quickly.
