Recipe: Blueberry Jam

 In Germany there is a product called sugar with pectin that most people use to make jam. We didn't have any, so we had to get creative. So this recipe doesn't call for it.

Blueberry Jam:
about 6 cups (1 kilo) blueberries
2 cups (400g) sugar
3-4 tbsp lemon juice
4-6 tbsp corn starch with pectin or 1-2 tbsp agar agar or some other thickener


Add blueberries, sugar and lemon juice to a saucepan. Heat over medium-high heat until the blueberries break down and become juicy. 






Press the berries to the side of the pan or puree with a mixer or blender. 


Allow to boil for a few minutes. Once the berries are broken down as well as you would like, add the thickener. Allow to simmer for several more minutes. 




Pour into clean jars to cool and preserve.
