Bread Baking: Soft Corn Bread

 This is my family's recipe for corn bread, which is a bit sweet. Meant to be eaten with butter and honey.

Soft Corn Bread:
1 cup (125g) flour
1/4 cup (50g) sugar
1 cup (145g) cornmeal
1 cup (225mL) milk
4 tsp baking powder
3/4 tsp salt
2 eggs
1/4 cup (60g) butter

You don't need a mixer for this recipe. But you do need to cream the butter first. Then add sugar and cream together.

Add eggs and combine with butter and sugar.
Add flour, baking powder and salt.
Combine with milk.
Finally, add the cornmeal.
Pour batter into a greased baking pan.
Bake at 425°F or 220°C for 20-25 minutes.
Allow to cool and cut into squares.
This cornbread is soft and milk. The sugar balances the bitterness of the cornmeal and the flour adds some gluten to the cornbread to make it softer.
