Recipe: Peanut Butter Oatmeal No-Bake Cookies

 These are great for a quick snack when you don't have a lot of time and energy to work on it.

Peanut Butter Oatmeal No-Bake Cookies
1 1/2 cups (300g) sugar
1/2 tsp salt
1 tsp vanilla or 1 tbsp vanilla sugar
1/4 cup (80g) butter
1/2 cup (120mL) milk
1/2 cup (125g) peanut butter
1/2 cup (30g) shredded coconut
2 cups (170g) oats

Add sugar, milk, butter, vanilla and salt to a saucepan.
Break butter into pieces and heat on high heat until mixture comes to a boil, stirring occasionally.

 Remove from heat and stir in peanut butter until completely melted.

Stir in oats and coconut.
 Spoon onto a sheet of parchment paper and allow to set up at room temperature for about an hour or in the fridge for half an hour.
These cookies are a family favorite. They are soft and sweet and taste of peanut butter and oats. If you don't like coconut, you can leave it out.
