Bread Baking: Pumpkin Bread

 It's Fall. The season of pumpkin spice lattes. Let's make some pumpkin bread. Pumpkin bread is a slightly sweet, quick bread.

Pumpkin Bread:
2 cups (250g) flour
1 1/2 tsp baking powder
2 tsp pumpkin spice
1 tsp cinnamon
pinch of salt
1 1/2 cups (375g) pumpkin puree
1/2 cup (120mL) oil
2/3 cup (135g) brown sugar
1/2 cup (100g) sugar
1/4 cup (60mL) milk
2 eggs
1 tbsp vanilla extract or 3 tbsp vanilla sugar


Combine dry ingredients in a large mixing bowl and set aside. 


In another large mixing bowl, whisk together pumpkin puree and oil. 


Stir in eggs, milk and vanilla. Fold wet ingredients into dry ingredients. 


Pour batter into a well-greased bread pan and bake at 350°F or 180°C for 55-60 minutes or until toothpick inserted into the center comes out clean.
