Recipe: Marble Cake

 I must admit, one of my favorite cakes is just a good vanilla cake. But I also love a good chocolate cake. One of the best things in the world is a good marble cake, combining the best of vanilla cake with the strong flavor of chocolate cake. What more could you want?

Marble Cake:
1/3 cup (80g) butter
2/3 cup (150mL) oil
1 3/4 cup (350g) sugar
1 tbsp vanilla extract
1/2 tsp salt
1 tbsp baking powder
3 cups (375g) flour
1 cup (225mL) milk
6 egg whites
1/3 cup (30g) cocoa powder


First, whip egg whites to stiff peaks. Set aside. 


Then, in a large mixing bowl, cream butter, oil and sugar together. 



Add vanilla, salt and baking powder. Mix in about a third of the flour alternating with half the milk, stirring in thoroughly between each addition, until all the flour and milk have been added. 



Gently fold in the egg whites. 


Split the batter between two bowls as evenly as possible. Feel free to use the same bowl the egg whites were beaten in to save on dishes. Add the cocoa powder and fold it in to one of the portions of batter. 



Spoon batter into greased and lined baking form, keeping the colors as separate as possible. Using a skewer, gently marble the two colors together. 





Bake at 300°F or 160°C for 35-50 minutes or until a skewer inserted into the center comes out clean.
