Bread Baking: Coconut Bread

 This sweet coconut bread is from the Caribbean. 

 Coconut Bread:
3 cups (375g) flour
2 cups (200g) shredded coconut
1 cup (200g) sugar
1 tbsp baking powder
1 tsp salt
1 tsp nutmeg
2 eggs
1 cup (225mL) milk
2 tbsp melted butter
1 tsp vanilla extract or 1 tbsp vanilla sugar 

Combine dry ingredients. 

Whip eggs until frothy. 

Stir milk, melted butter and vanilla into eggs. 

Pour into greased and lined bread form and smooth it out. 

Bake at 350°F or 180°C for 50-65 minutes or until a toothpick inserted into the center comes out clean. 

The taste reminds me of banana bread, but dries out very quickly. Make sure to wrap it in plastic wrap to keep it fresh.
