Recipe: Banana Cream Pie

This is a great dessert for the summer time since it doesn't have to bake. Nice and cool and refreshing.

Banana Cream Pie:
2 prepared graham cracker crust or baked bottom crust
1 3/4 cup (420mL) milk
1/2 cup (110mL) whipping cream
1/2 cup (100g) sugar
pinch salt
4 egg yolks
1/4 cup (30g) cornstarch
1 1/2 tsp vanilla extract or 4 1/2 tsp vanilla sugar
2 tbsp butter
4 bananas

1 cup (225mL) whipping cream
2 tbsp sugar
1/2 tsp vanilla extract or 1 1/2 tsp vanilla sugar



Combine milk, cream, sugar and salt in a saucepan. 


Heat over medium heat to a simmer.

In a separate bowl, whisk egg yolks and cornstarch together. 


Slowly add the egg mixture to the milk mixture with a whisk. 


Simmer until bubbles begin to burst on the surface. Remove from heat. 


Whisk in vanilla and butter. 


Allow to cool several minutes. Slice half the bananas into the pie crust.


Pour custard on top. 


Refrigerate at least 2 hours. Top with more banana slices. Whip cream, vanilla and sugar together and top the pie with the cream.

This recipe makes 2 8-inch pies.
