Recipe: Lemon Crinkle Cookies

 I feel like nothing goes with summer better than a glass of lemonade. Here's the cookie version.

Lemon Crinkle Cookies:
1 cup (200g) sugar
about 2 tsp lemon zest
1/2 cup (125g) butter
1 egg
about 1/4 cup (4 tbsp) of lemon juice
1/2 tsp vanilla extract or 1 1/2 tsp vanilla sugar
1/4 tsp salt
1/4 tsp baking powder
1/4 tsp baking soda
1 1/2 cups (185g) flour
1/2 cup (65g) powdered sugar

Combine sugar and lemon zest. 

Cream in the butter. 

Beat in egg, lemon juice and vanilla. 

Combine salt, baking powder, baking soda and flour. 

If you prefer, chill the dough for an hour. Otherwise, roll the dough into balls and roll it in the powdered sugar. 

Bake at 350°F or 180°C for about 10 minutes.

These lemon cookies are nice and chewy and have a refreshing taste of lemon.
