Bread Baking: Monkey Bread

Monkey bread is a pull-apart bread made with caramel and cinnamon. I love nuts, so I threw in some walnuts. But it's a great sweet bread.

Monkey Bread:
4 cups (500g) flour
1 generous cup (250mL) warm water
1 tbsp dry yeast
1 tsp salt
1/2 tsp sugar
1/2 cup (125g) melted butter
1 cup (200g) brown sugar
2 tsp cinnamon
1 cup (150g) chopped walnuts

Combine warm water, yeast, and sugar. In a large mixing bowl, combine flour and salt and mix in yeast mixture.

Stir until you can't anymore. Then knead in the rest. You may not need quite all of the flour.

Once a soft dough has formed, cover and allow to rise for an hour.

Knead briefly. Roll into small balls, dip in melted butter, roll in brown sugar and cinnamon mixture and add a few walnuts. Place into ungreased bundt pan. Press them together slightly.

Bake at 350°F or 180°C for about 30 minutes.
