Recipe: Homemade Vanilla Wafers

 I was craving vanilla wafers the other day. They do have something quite similar in Germany (called Eierplätzchen), but I wanted to make my own.

Vanilla Wafers:
1/2 cup (125g) butter
2 cups (250g) powdered sugar
3 egg whites + 1 whole egg
1 1/3 cups (170g) flour
2 tsp vanilla extract or 2 tbsp vanilla sugar
pinch of salt


Cream butter and powdered sugar until smooth and fluffy. 


Beat in eggs one at a time. 


Briefly combine flour, vanilla and salt. Do not overbeat with the flour. 


The dough will be quite thin. Place in a piping bag with a round tip or no tip. 


Pipe small cookies shapes onto a lined baking sheet leaving lots of space between them. 


Bake at 350°F or 180°C for about 6-8 minutes or until cookies begin to brown.
