Bread Baking: Pumpkin Scones

 These pumpkin scones are really delicious and are a perfect Fall treat.

Pumpkin Scones:
2 cups (250g) flour
1 tbsp baking powder
1 tsp cinnamon
1 1/2 tsp pumpkin spice
1/2 tsp salt
1/2 cup (125g) butter
1/2 cup (110mL) whipping cream
1 egg
1/2 cup (115g) pumpkin puree
1/2 cup (100g) brown sugar
1 tsp vanilla extract or 1 tbsp vanilla sugar
coarse sugar to sprinkle on top


Combine dry ingredients in a large mixing bowl (flour, baking powder, cinnamon, pumpkin spice and salt). 



Cut in butter until mixture resembles coarse crumbs. 


In a separate bowl, combine whipping cream (leaving a tablespoon or two), egg, pumpkin, brown sugar and vanilla. 


Pour over dry ingredients. Stir until combined. If the mixture is too sticky, add a tablespoon or two more flour. Dough should be possible to cut with a knife. 



Press the dough onto a line baking sheet. Cut into pieces and pull apart so each has a bit of space between them. 



Brush last tablespoon of whipping cream onto the scones. Sprinkle with coarse sugar. 



Bake at 400°F or 200°C for 20-25 minutes.
