Bread Baking: Homemade Glazed Doughnuts

 This is a family recipe that my dad used to make for us when I was young.

Homemade Doughnuts:
1 tbsp dry yeast
1/4 cup (60mL) warm water
1/3 cup (70g) sugar
1 cup (225mL) hot milk
2 tbsp shortening (vegetable fat)
1/2 cup (125g) mashed potatoes (yes, really)
1 egg
1 1/2 tsp salt
4-5 cups (500-625g) flour

Glaze:
powdered sugar
milk


Combine yeast, warm water and a tablespoon of sugar. 

Thanks to my little helper.

Stir the shortening into the hot milk until the shortening is melted. 


Stir the milk, mashed potatoes, egg, salt and yeast mixture together in a large mixing bowl. 


Add flour slowly. Stir until you can't anymore and knead more flour into the dough until it's no longer sticky. 



Cover and allow to rise at least an hour. Roll out on a floured surface to about 1/4 inch. Use two circle cutters to make doughnut shapes. 





Allow doughnuts to rise another half an hour. Heat about half a liter (2 cups) of oil in a pot (I used setting 7 out of 9). Carefully place the doughnuts into the hot oil and heat until the doughnuts cook to a golden brown, flipping to brown on both sides. 



Remove from oil with a slotted spoon or small sieve. Immediately place in glaze and cover both sides of the doughnuts with glaze. Remove with a fork and place on baking paper to cool. To make the glaze, put the powdered sugar into a large bowl and add milk a tablespoon or two at a time until it's thin enough to glaze the doughnuts.


These doughnuts taste amazing. Only slightly more dense than Krispy Kreme. Chef's kiss.
