Recipe: Biscoff Cookies Copycat

 I love Biscoff cookies, also known as Lotus cookies. They're basically a spiced butter cookie and they're very easy to find in Germany in the holidays. But outside of that time of year, they can be more difficult to find. So, I decided it was time to learn to make them myself.

Biscoff Cookies Copycat:
2 cups (250g) flour
2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ginger
1/4 tsp cloves
1/2 tsp baking soda
pinch salt
1 tsp vanilla extract or 1 tbsp vanilla sugar
1 cup (250g) butter
3/4 cup (150g) brown sugar


Combine all the dry ingredients together. 



In a separate bowl, cream butter. Cream brown sugar and vanilla with it. 



Slowly add the dry ingredients until mixture forms a dry dough. 



Roll out onto baking paper and remove dough between cut outs. These will spread a bit, so make sure they have plenty of space between them. 



Bake at 350°F or 180°C for 10-12 minutes or until dough is no longer shiny and edges are just starting to brown.
