Recipe: Cherry Cake

 This is a great base cherry-flavored cake to use under fondant or in any carved or decorated cake.

Cherry Cake:
1/3 cup (80g) butter
2/3 cup (150mL) oil
1 cup (200g) sugar
1/2 tsp salt
1 tbsp baking powder
3 cups (375g) flour
1 cup (250g) cherry jam
6 egg whites


Cream butter. Beat in oil, sugar, vanilla, salt and baking powder. 


Add flour a third at a time, alternating with the jam about half at a time until all flour and jam is combined. 




In a separate bowl, beat egg whites to stiff peaks. 


Fold egg whites into batter. Bake at 300°F or 160°C for 40-60 minutes, depending on the size of the pan.
