Recipe: No-Bake Cheesecake

 This is a great treat for summer as it's nice and cool. It's one of my daughter's favorite desserts.

No-Bake Cheesecake:
1 package (200g) of graham crackers or butter cookies
1/2 cup (125g) melted butter
2 8-oz packages (400g) cream cheese
1/2 cup (100g) sour cream or quark
2 cups (250g) powdered sugar
1 tsp vanilla extract or 1 tbsp vanilla sugar
3 cups (600mL) whipping cream


Make the crust first. Crumble the graham crackers or butter cookies into fine crumbs. 


Stir in melted butter. Press the crumbs in the bottom of the baking form. I am using two small pie plates today. 



Then, combine cream cheese, quark or sour cream, powdered sugar and vanilla in a large mixing bowl. 


In a separate bowl, whip whipping cream to soft peaks. If you are having trouble whipping the cream, add a bit of corn starch. 


Gently fold the whipped cream into the cream cheese mixture. 


Pour it into the prepared crust(s). Chill in the fridge about 4 hours. 



This cheesecake is lovely and light and creamy. My daughter could probably eat a whole cheesecake alone. It also pairs great with any kind of fruit sprinkled on top.
