Bread Baking: Farmer's Bread (Bauernbrot)

 This is a classic farmer's bread recipe from Germany, called Bauernbrot.

Bauernbrot:
1-2 cups (around 150g) white flour (German number 405 or 550)
2 cups (280g) unbleached flour (German number 1050)
1 tbsp sugar
2 tsp salt
1 1/2 cups (380mL) warm water
1 tbsp dry yeast


Stir water, yeast and sugar together. 


Add the unbleached flour to a large mixing bowl and stir in salt. Then stir in yeast mixture. 



Slowly add white flour until you reach the right consistency. The dough should be soft, but not sticky. 



Cover and allow to rise for an hour. Brush the dough with water. Place in preheated oven at 400°F or 200°C for about 15 minutes. Then reduce temperature to 350°F or 180°C for another 20 minutes.

This slightly salty bread is great eaten alone or with cheese or paired with a hearty meal.
